Ingredients :
- 10 oz packge frozen spinach
- 1 sleeve unsalted Saltine crackers, crushed finely
- 1 tsp cream
- 2 Tb melted butter
- 2 eggs, beaten
- to taste Garlic salt and pepper
Method :
- Boil spinach in salted water, strain, cool, squeeze out excess water
- Combine spinach with crackers, cream, butter, eggs, salt and pepper
- Roll mixture into 1"-2" diam. balls
- In unsalted water, boil balls until they float to the top
- Remove from water and cool
- Brown in butter before serving. Add additional garlic salt to taste
