Ingredients :
- 1 box Rotini spiral pasta
- 1 green pepper chopped coarsley
- 1/2 red onion or 1 small slivered
- 1/2 cup chopped celery (mom uses more)
- 4 green onions (mom uses more)
- 1 cup mushroom slices (mom doesn't use because they get brown)
- 1/2 package frozen peas rinsed in a colander
- 10-15 pitted, ripe olives sliced
- 10 cherry tomatoes halved
- 3/4 bottle Italian dressing (mom uses Ken's Italian with aged Romano)
- Several shakes of red wine vinegar
Method :
- Mom mixes it all up on one day and then let it sit over night, and adds extra dressing (sometimes vinegar) if the pasta absorbs it.
- Mom makes pasta al dente. When done cooking the pasta put it in a colander and rinse cold water over it so it stops cooking it.
